Hello to Esra readers and thank you for welcoming me.

I made aliyah from Johannesburg in June 2006 leaving behind my thriving cooking school and everything that was familiar to me.

Less than two years later I am running Delicious! cooking classes in Hod Hasharon and I am finally able to negotiate my way through the supermarket without feeling totally handicapped.

As part of my service to Delicious! Students – and potential students – I write a weekly newsletter containing simple yet stylish recipes and details of red-hot shopping spots.

It is my pleasure to share these Delicious! gems with Esra readers too.

First up...

Summer is well on its way and the very last thing you want to do in the heat is spend too long in the kitchen. This Mediterranean olive and feta tart takes literally minutes to prepare and makes the ideal light lunch or supper dish with a fresh green salad on the side.

Add interest with the addition of sun-dried tomatoes or blanched asparagus spears or even tinned tuna.... you’re limited only by your imagination!

Crustless Olive and Feta Tart

Ingredients

3 onions, sliced

3 tablespoons olive oil

1 cup self-raising flour

3 eggs, lightly beaten

1 cup plain yogurt

200grms feta cheese, cubed

1 cup grated Tal Emek/Cheddar cheese

3 tablespoons chopped fresh dill

Salt and freshly ground black pepper

½ cup black olives, stoned

Method

1:Preheat oven to 180 C.

2:Cook the onions in oil for ten minutes to soften but not brown.

3:Place flour in a bowl, add eggs and yogurt and stir well.

4: Stir in cool onions, feta, grated cheese and dill and season well.

5: Spoon mixture into a greased baking tin and position olives on surface.

6: Bake for 20 minutes at 180 C or until golden and set.

You'd never dream that the country's most stylish designer clothing boutique and gourmet coffee shop could be found hiding within a sleepy little moshav just behind the Kfar Saba industrial zone, right?

Prepare to change your perceptions.

A visit to ‘Ha Galleria Shel Almog’ is a must for anyone who is tired of shopped-in-one-shopped-in-them-all malls and is unlike anything I've ever come across in this multi-faceted little country.

I don't want to tell you too much for fear of spoiling the surprise but suffice it to say that the sleek 'n style conscious owner Almog knew just what she was doing when she recently opened her coffee shop to complement her fabulous clothing range. I'll give you a hint and tell you that guests sit at antique tables on antique couches and chairs set on Persian carpets, picture-perfect sandwiches and salads are served on rose-patterned china and muted light comes from stained glass lamps which stand regally amongst a sea of roses.

I don't know street names so you'll have to bear with me as I attempt to direct you there and take no responsibility if you get horribly lost.

From route 40 turn at the lights towards the Mega and Home Center stores and continue straight down this road passing the gas station on your right and offices on your left. Turn left at the very first possible place you can turn - this turning is in the middle of the office blocks so keep an eye out - and bump your way down the dust road through the fields until you reach a yellow sign for Moshav Yamin. Turn right at this sign and drive into the moshav then take the left fork in the road and you'll see a driveway with signs for a horse-riding school and Ha Galleria Shel Almog virtually immediately.
